If the winemaker wants more alcohol in the finished product, then unfermented, sweet grape must is added to a finished dry wine to increase the sweetness level. Moscato from Italy employs this method, resulting in a relatively low alcohol wine of 5-7 percent. Stopping fermentation before yeasts finish their job of converting sugar to alcohol is often employed to retain sweetness. There are several methods used to retain or create residual sugar in wine. These two brands and a legion of fellow travelers introduced a generation of Americans to table wines that more than doubled domestic wine consumption from 1.31 gallons in 1970 to 2.8 gallons in 2014. These producers follow in the footsteps of fabulously successful wines - notably Kendall Jackson chardonnay and Sutter Home white zinfandel - that utilize a bit of residual sugar to light up the American palate. ![]() Many people, like the woman to whom Pat was talking, just don't realize they are drinking sweet wine.
